Jalapeno Parmesan Pasta
- 1 tablespoon Olive Oil
- 3 pieces Jalapenos (seeded and diced small)
- 4 teaspoons Garlic (minced)
- 2 cups Milk
- 4 tablespoons Butter
- 4 cups Vegetable Broth
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1/4 teaspoon Red Pepper Flake
- 16 ounces Fettucine
- 3/4 cup Parmesan Cheese (grated)
- 1/4 cup Pepper Jack Cheese (grated)
- 1. In large skillet add olive oil and heat over medium heat.
- 2. Add jalapenos and saute for 2 minutes. Stir frequently.
- 3. Add garlic and saute for 30 seconds.
- 4. Add milk, butter, broth, salt, pepper, red pepper flakes and pasta. Increase heat to medium high and bring to a boil.
- 5. Use a wooden spoon and stir noodles as they soften. Reduce to low heat .
- 6. Cover and simmer for 20 - 22 minutes. Stir occasionally.
- 7. When sauce has thickened and noodles are al dente remove from heat.
- 8. Add cheeses and stir to melt.
