Spicy Balsamic Bean Dip
- 1 15.5 ounce can small white beans, rinsed
- 1 15.5 ounce can small red beans, rinsed
- 1 15.5 ounce can black beans, rinsed
- 1 1/2 cup red onion, diced small
- 1/2 cup cilantro, chopped
- 1 cup scallions, sliced thin
- 2 tablespoons crushed red pepper flakes
- 1 1/2 cups balsamic vinegar
- 1/2 cup rice wine vinegar
- 1/2 cup extra virgin olive oil
- 2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 french baguette, sliced and toasted or a back of tortilla chips
- Rinse beans and place in a large non reactive bowl.
- Dice the red onion and slice the scallions. Add to the beans.
- Mince the cilantro, please note if you do not like this herb you can subsitute it with italian parsley. (If needed use dried herbs but cut the amount in half)
- Mix in the remaining ingredients and serve immediately.
- This is also a great topping for a green salad.
