Mcintosh Tart

  1. preheat oven to 400. Put apples and water in a small saucepan. Cover and cook til tender. Mix in brown sugar and cinnamon. Measure 1/2 cup of this applesauce into a bowl. Add Sugar, Heafy Cream, Lemon rind and juice, Sherry and Eggs. Mix well and pour into pie shell. Bake 15 minutes, then lower oven temperature to 325 and bake 40 minutes or until filling is set. Cool to rome temperature.
  2. Preheat oven to 425. Beat Egg Whites to soft peaks; slowly add Confectioners' Sugar and continue beating to stiff peaks. Spoon this merangue over the pie; spread well to the edge so it will not shrink as it bakes. Bake til lightly golden, about 5 minutes.
