Hilary'S Squash Casserole
- 5 medium yellow squash sliced 1/4 inch rounds
- 1 large onion halved and sliced thin
- 2 tablespoons butter, divided
- 1/2 cup chicken stock
- 1 1/2 tubes ritz crackers
- 1/2 cup cream
- salt
- pepper
- Heat oven to 350
- Butter oven-proof bowl/casserole
- Saute onions and squash until slightly soft, adding salt and pepper to taste
- Add chicken stock and cover for about 5 minutes
- Crumb the ritz crackers in the tubes
- Layer half tube of ritz crackers on the bottom of the bowl.
- Pour off chicken stock and add 1/2 squash mixture to bowl.
- Layer second half tube of ritz crackers over squash.
- Add remaining squash mixture.
- Saute third half tube of ritz crackers in butter briefly.
- Top bowl with sauteed crackers.
- Pour cream over the top.
- Cook in oven for 30 minutes.
