Amazing Scalloped Potatoes
- 1/4 cup butter
- 1/4 cup flour
- 2-1/2 cups of milk
- 1 tsp salt (or to taste)
- 1/2 tsp pepper (or to taste)
- 8 cups of thinly sliced potatoes
- 1 cup of shreaded colby-monterey jack cheese, divided
- Preheat oven 350 degrees. Grease an 8x12 inch baking pan and set aside. In a medium saucepan, melt butter on medium heat. Add flour and whisk until there are no more lumps. Pour in the milk and whisk continually for about 10 minutes or UNTIL mixture is thick. Add seasonings. Place 1/3 of the sliced potatoes in the bottom of the baking dish, and pour 1/3 of the sauce on top. Sprinkle with some cheese. Continue until you have three layers ending with the cheese. Bake at 350, covered, for 40 minutes or until potatoes are soft. Uncover, and bake for another 40 minutes. Enjoy!
