Hanukkah Donuts
- 2 1/2 c. flour
- 1 t. baking powder
- 2 eggs - room temp
- 12 oz. sour cream - room temp
- 2 T sugar
- 1/4 t. salt
- 1 t. vanilla
- 1 1/4 c.peanut oil to fry
- 1 c. powdered sugar
- 1. Mix all ingredients, in large bowl, but the oil and powdered sugar. Mixture will be soft.
- 2. Heat oil until a 1" cube of bread is golden brown in about a minute.
- 3. Place 1 T. dough in hot oil for 3-5 minutes, turning over until golden brown. (Resist making the doughnuts too large as they will be uncooked in the middle.)
- Remove and drain on layers of newspaper or open paper bags covered with a few layers of paper towels.
- 4. Place in paper bag with powdered sugar and shake to coat.
- 5. Arrange on platter serve warm.
- HINT:
- *Loosely cover dougnuts with papertowels to avoid condensation if you are delivering.
- *If recipe is doubled yield is 60 donuts.
- * Okay to store extra dough, covered and refridgerated, to use the next day.
