Apricot Scones
- 2 C. flour
- 3 T. sugar
- 1 T. baking powder
- 1/2 tsp. salt
- 1/2 C. butter, softened
- 1 egg
- 3/4 C. heavy cream
- 1/2 C. dried cranberries
- 1/2 C. apricots, cut up
- In a large bowl mix together flour, sugar, baking powder and salt. Melt butter in microwave about 20-30 seconds. Using a fork mix into dry ingredients. Add 1 egg. Pour in 3/4 C. heavy cream and cut up apricots and cranberries.
- Continue to mix with a fork until all the dry ingredients are mixed. If there is still too much dry flour mixture, you may add 1 T. cream at a time until it is mixed.
- Pick up dough and form into balls the size of golf balls. Place on a cookie sheet that has been covered with parchment paper. This will take two cookie sheets. Place in 425 degree oven.
- for 12 to 14 min. until lightly browned.
