Stir-Fried Noodles
- 1/3 lb. cooked lo mein noodles
- 1/2 c. lean meat (pork, beef or chicken), shredded
- 1/2 Tbsp. cornstarch
- 1/2 Tbsp. cooking wine or sherry
- 1/2 Tbsp. soy sauce
- 6 each 1/2-inch pieces green onion
- 3 Tbsp. oil
- 1/3 c. bamboo shoots (fresh or canned)
- 3 Tbsp. carrot
- 3 Tbsp. presoftened mushrooms
- 1/4 lb. spinach
- 1/2 c. stock
- 1 Tbsp. soy sauce
- 1/2 tsp. salt
- dash of pepper
- Cook the noodles as directed on package.
- One-third pound dried noodles equals one pound cooked noodles.
- Add cornstarch, cooking wine and 1/2 teaspoon of soy sauce to the meat and marinate for 20 minutes.
- Tear the spinach into 2-inch pieces.
