Asian-Style Spicy Coleslaw
- 1/4 Cup plus 2 tablespoons smooth peanut butter
- 3 Tbsp. fresh lime juice
- 3 tbsp. Asian fish sauce
- 3 tbsp water
- 3 tbsp. sugar
- 3 garlic cloves minced
- 2 tbsp. Sriracha chile sauce
- 2 lbs. Napa cabbage (bagged cole slaw is even better) thinly slices (12) cups
- 3/4 pound red cabbage (thinly sliced) 3 cups
- 3 medium carrots, julienned
- 2 red peppers, thinly sliced
- 3 tablespoons chopped cilantro
- 15 mint leaves
- Salt & fresh ground pepper
- 1. In a medium bowl, whisk the peanut butter with the lime juice, fish sauce, water, sugar, garlic & Sriracha.
- 2. In a large bowl, toss the napa cabbage (cole slaw) & red cabbage with the carrots, peppers, cilantro & mint. Toss the coleslaw with the dressing & season with salt & pepper.
- Serve immediately
