Yaksik

  1. 1. Wash the glutinous rice and soak in water for 3 hours, drain water and set aside for 10 minutes.
  2. 2. Wipe the jujube with damp cotton cloths, cut the flesh a round seeds. Slice it into 6 pieces. Skin the chestnut and slice into 6 pieces
  3. 3. Remove tops of the pine nuts and wipe with dry cotton cloths.

  5. 1. Boil water for steaming. Layer a damp cotton cloths on the bottom, put soaked rice and steam for 20 minutes Sprinkle salt water, mix well with before steaming for 30 minutes.
  6. 2. Put the jujube stones and water in the pot, cover the lid and simmer it for 15 minutes on medium heat, strain it (19 g).
  7. 3. Put the sugar in a pot and heat it up for 3 minutes on medium heat. When the sugar melts, coat the pan with cooking oil. When sugar turns brown, add the starch powder and stir well for a minute to make steamed rice sauce.
  8. 4. While the steamed rice is still warm, add soy sauce, sweet steamed rice sauce, yellow sugar, cinnamon powder, jujube stone tea, honey, regular sugar and sesame oil. Mix them well. Add chestnuts, jujube and pine nuts and mix well again.
  9. 5. Put rice mix into the steaming pot and steam on high heat for 10 minutes. Then lower the heat to medium, steam for 20 minutes, Mix well. Reduce the heat to low, steam again for 20 minutes. Mix well to evenly distribute the sauce and steam for 10 more minutes.

  11. Steaming in boiling water would produce deeper brown color, better taste and sweet smell.
