Cupcake Delight!
- 1 Box White Cake Mix or Yellow Cake Mix
- 2 Vanilla Pudding cups
- 1 (8 ounce) package of Cream Cheese, room temperature
- 3 tablespoons of vanilla frosting
- 1 (20 ounce) can of Crushed Pineapples, Well Drained
- 1 carton of Whipped Cream
- 1/2 cup of crushed Pecans or Walnuts
- 12 Slices of Strawberries
- Begin to prepare cake mix as directed on the box. Grab your cupcake pans and start adding your cupcake tins.
- Bake the cupcakes in the oven at 350u0b0 degrees for about 15-20 minutes or insert a tooth pick until it comes out clean. Cool until completely cool.
- In a medium bowl, beat the cream cheese until smooth. Then you add the pudding into the mixture and beat just until blended. Then you beat in the frosting just until blended.
- When cupcakes are completely cooled layer each cupcake evenly with a tablespoon of the cream cheese filling.
- Then sprinkle each cupcake evenly with the crushed pineapples. Then top each with a nice glob of whipped cream. Take the Crushed pecans or walnuts and sprinkle over the top; and then garnish with the strawberry slices.
- Allow cupcakes to be stored in the fridge for 3-4 hours to let the ingredients settle. Enjoy!!!
