Mushroom Frittata
- 1 c. sliced fresh mushrooms
- 2/3 c. chopped onions
- 2/3 c. chopped green pepper
- 1 c. chopped fresh zucchini
- 1 minced garlic
- 2 Tbsp. vegetable oil
- 5 eggs
- 1/3 c. light cream
- 1/2 tsp. salt
- dash of pepper
- 1 1/2 c. soft bread cubes, lightly packed
- 8 oz. cream cheese, cut in 1/2-inch cubes
- 1 c. shredded Cheddar cheese
- Saute mushrooms, onions, green pepper, zucchini and garlic in oil until crisp-tender.
- Beat eggs
- with cream, salt and pepper; add mushroom mixture, bread cubes, cream cheese and Cheddar.
- Stir thoroughly, but lightly, so cream cheese cubes are intact.
- Pour into well-greased 9-inch pie plate.
- Bake at 350u0b0 for 45 minutes or until set in center and brown.
- Cool 5 to 10 minutes.
- Serves 6.
