Susan'S Incredible All-Weather Popsicles!

  1. Instead of making ice-cubes in my ice cube tray, I've created "incredible all-weather popsicles". Freeze fresh pulp and juice,using skin and peel of fruit. Orange and watermelon cubes are the fastest. Freeze as you would ice cubes, BUT when the cubes are nearly set (a very brief time, because it is fresh fruit concentrate), insert one toothpick into each "healthy cube". Store in the freezer.
  2. Serve the cubes separately for guests who may be frail or only need to hydrate a little. Serve individual popsicles in a small vessel: Japanese dishware is especialy lovely.
  3. As guests finish their "hydration", serve the official first course of the meal.
  4. At my recent Family Garden party, and subsequent Race for the Cure 2008 "after-party" this September, the popsicles literally disappeared.
  5. My new "popsicles" are dedicated to my mother Josie, because she taught me how to "spit"
  6. ice-cubes from the front porch of our family home, in the late 1950's and 60's.
  7. The cubes are loved by old and young, and are devoured quickly, so have back-up watermelon puree or orange juice with fiber in the blender for the next freezer batch!
  8. At the end of the evening, as guests are leaving, serve shot glasses of fresh fruit juice for your guests' journey home.
  9. It's the "best guest" idea I've had in years, and my freezer is now full of fresh fruit ice cubes to hydrate me daily as I garden.
  10. I should really call them "popsicles with a bonus", because fresh fruit and produce are available to me locally, year-round.
  11. My next experiment is to focus on Hindu cuisine, since my natural taste buds crave fig, persimmon, mango and papaya!
