Orange-Ginger Marinated Swordfish Steaks
- 5 (8 oz.) swordfish steaks (about 1 inch thick)
- 3/4 c. tomato-based barbecue sauce
- 1/2 c. white wine
- 1 Tbsp. grated orange rind
- 1/2 c. orange juice
- 1/8 c. soy sauce
- 1 Tbsp. finely chopped fresh ginger root
- 2 cloves garlic, minced
- parsley sprigs and orange slices for garnish
- Arrange fish in a large shallow dish.
- Combine barbecue sauce and next 6 ingredients; pour over fish.
- Cover and refrigerate 2 to 24 hours, turning occasionally.
- Remove fish from marinade, discarding marinade.
- Place fish in grill baskets that have been coated with cooking spray.
- Cook, covered with grill
- lid, over medium coals (300u0b0 to 350u0b0), 7 to 10 minutes on each side. Garnish, if desired, and serve immediately.
