Pepper Steak With Rice
- 3 cup hot cooked rice
- 1 lb round steak 0.5 inch thick
- 1 Tbsp paprika
- 2Tbsp butter
- 2 cloves garlic crushed
- 1.5 cup beef broth
- 1 cup green onions sliced
- 2 green pepper cut 1 inch strips
- 2Tbsp corn starch
- 0.25 cup water and soy sauce
- 2 large tomatoes (cut in length)
- while rice is cooking pound steak to 1/4 inch thickness and cut into 1/4 inch stips
- sprinkle meat with paprika and allow to stand while preparing other ingrediants
- using a large skillet brown meat in butter
- add garlic and broth
- cover and simmer for 30 mins
- stir in green onions and green peppers
- cover cook 5mins more
- blend cornstarch, water and soy sauce. Stir into meat mixture. Cook, stirring until clear and thickened in about 2mins
- Add tomatoes and stir gently. Serve over bed of rice.
