Venison Meatloaf With Honey-Ginger Glaze
- (for the loaves)
- 2 pounds Ground Venison
- 1 pound Ground Beef
- 1 1/2 cups breadcrumbs
- 2 large eggs
- 1 large Red Onion, chopped
- 2 Jalapeno Peppers, chopped
- 4 Garlic cloves, chopped
- 1/2 cup Cilantro, chopped
- 3 Tbsp olive oil
- 2 Tbsp butter
- 2 tsp sea salt
- 1 tsp ground black pepper
- (for the glaze)
- 1 cup ketchup
- 2 Tbsp Worcestershire sauce
- 2 Tbsp honey
- 2 Tbsp grated ginger
- 1)treheat oven to 350 degrees.
- 2)taute onion, jalapeno peppers, and garlic in the olive oil and butter, until the onions caramelize.
- 3)transfer the onion mixture to a large bowl. Allow to cool slightly.
- 4)thisk ketchup, Worcestershire sauce, honey, and ginger in a medium bowl. Reserve 1/2 cup to glaze the tops of the loaves.
- 5)tn the large bowl, combine the remaining glaze mixture with the slightly cooled onion mixture. Add all other loaf ingredients. Mix.
- 6)tivide mixture in half and transfer to two standard bread pans (10.75W x 6.5L).
- 7)tpread remaining honey-ginger glaze on top of loaves and bake at least 1 hour (until center temperature registers 160 degrees).
