Dessert Crepes With Carmelized Apples And Spiced Whipped Cream
- 6 medium/small granny smith apples
- 1/2 cup sugar
- 1/2 stick unsalted butter
- pinch of cloves
- for spiced cream:
- whipping cream
- confectioner's sugar
- cinnamon
- cloves
- 1 recipe crepes
- peel apples and cut into bite sized cubes. place a medium sized frying pan (preferably cast iron or heavy bottomed) over moderate heat. stir butter and sugar together to mix, then let stand until the sugar starts bubbling. put the apples in the pan and stir, making sure that no apples stick to the bottom. stir continously until apples begin to turn golden-brown and butter/sugar mixture becomes more thick and sticky. remove from heat.
- whip cream until it holds peaks. add confectioners suar, cinnamon and cloves until it tastes right to you.
- put a spoonful each of the cream and apples on a crepe and roll the crepe tightly, spreading the filling out as you go. repeat with remaining crepes. this dish should be served warm.
