Freezer To Crock Pot Hawaiian Chicken - 466 Calories
- 4-5 boneless skinless chicken breasts
- 1 (15 oz.) can pineapple tidbits with juice (don't drain it!)
- 1/2 cup chicken broth
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 2 Tblspn. Corn Starch
- Optional: Diced peppers, onions, carrots
- Directions:
- Cut chicken into 1 inch cubes.
- Place chicken cubes in a one gallon sized freezer bag. add in any optional vegetables. Set aside.
- Open can of pineapple.
- Pour approx. a 1/4 cup of the juice into a small bowl.
- Add the corn starch and wisk till well blended. Set aside.
- In a large mixing bowl, dump the remaining entire can (both pineapple chunks and remaining juice).
- Add in the chicken broth, brown sugar and soy sauce. Stir to blend till sugar is dissolved.
- Add in the small bowl of corn starch/juice mixture and stir until till well blended.
- Pour pineapple mixture into freezer bag with the chicken cubes.
- Squeeze as much air as possible from the bag as you seal it.
- Label and freeze up to 6 months.
- To Cook:
- Dump frozen (but if you remember to pull it from the freezer to thaw in fridge the night before that's ok too.)
- into crockpot.
- Cook on low: 10 hours if frozen 8 hours if thawed.OR Cook on high 6 hours if frozen or 4 hours if thawed.
- Till chicken is cooked all the way through.
- Serve over rice.
