Pan Seared Skirt Steak

  1. Chop garlic fine
  2. Grind garlic into paste using 1/4 teaspoon of salt and flat of knife blade.
  3. Mix ginger into garlic paste
  4. Add pepper to paste
  5. Rub onto both sides of the steak
  6. Put a tiny bit of oil on a skillet and heat until almost smoking
  7. Sear the steak for 1 minute on high heat on each side
  8. Put the pan into a preheated 350 degree oven for about 8 minutes (for a ribeye)
  9. Remove steak
  10. Swirl butter in pan, saute the shallot for a minute and splash in the wine
  11. Reduce by half
  12. Pour the sauce over the steak
  13. Garnish with freshly chopped parsley
