Simple & Elegant Pasta With Shrimp, Peas & Cheese
- 1 16 oz package pasta (some favorites: Fusilli, Orecchiette, Fettucini)
- 1 tablespoon olive oil
- 1 pound shrimp, peeled and deveined (tail on or off)
- 1 cup frozen peas
- 2 teaspoons chopped garlic
- 2 tablespoons butter
- 1/4 cup milk
- 1/4 cup grated Parmesan cheese
- 1/4 cup grated Pecorino Romano cheese
- 1 tablespoon dried oregano
- Salt and Pepper to taste
- If using frozen raw shrimp, thaw under cold running water. For fresh raw shrimp, clean and rinse.
- Fill large pot with water, cover and bring to a rolling boil. Add pasta and olive oil, cook for time recommended on package. Three minutes before pasta is finished cooking, add shrimp, garlic and peas to the boiling pot.
- Drain contents (do not rinse!) and return to hot pot. Add butter, mixing until thoroughly melted and coating all ingredients. Stir in cheese and finally milk. Crumble in dried oregano and add salt and pepper. Serve immediately.
