Zucchini Burgers
- zucchini

- garlic
- ricotta cheese

- 1. Grate 4 zucchini into paper towl lined (2-3 sheets) sieve or bowl.
- 2. While the papertowl is absorbing the excess water, chop 1/2 white onion and 2 cloves of garlic.
- 3. Drain the zuccini's excess water. It is very important to eliminate as much water as you can so the patty binds and the oil does splatter too much.
- 4. Heat pan on med.-high with olive oil. Before cooking the patties, I will often cook one piece of turky bacon to flavor the oil.
- 5. Add salt/pepper to taste to mixture as well as onion and garlic.
- 6. Beat in 2 egss or 4 eqq whites and 1 tbls. of ricotta cheese.
- 7. Form patties the size of a typical hamburger patties and place carefully into preheated pan to avoid splatter.
- 8. Cook on 2 min. max per side
