Zucchini Burgers

  1. 1. Grate 4 zucchini into paper towl lined (2-3 sheets) sieve or bowl.
  2. 2. While the papertowl is absorbing the excess water, chop 1/2 white onion and 2 cloves of garlic.
  3. 3. Drain the zuccini's excess water. It is very important to eliminate as much water as you can so the patty binds and the oil does splatter too much.
  4. 4. Heat pan on med.-high with olive oil. Before cooking the patties, I will often cook one piece of turky bacon to flavor the oil.
  5. 5. Add salt/pepper to taste to mixture as well as onion and garlic.
  6. 6. Beat in 2 egss or 4 eqq whites and 1 tbls. of ricotta cheese.
  7. 7. Form patties the size of a typical hamburger patties and place carefully into preheated pan to avoid splatter.
  8. 8. Cook on 2 min. max per side
