Healthier Chocolate Chip Cookie Bars
- 1 cup sugar
- 1 cup dark brown sugar
- 1 cup salted butter, softened
- 2 eggs
- 1.5 t vanilla
- 1 cup all purpose, unbleached flour
- 1 cup whole wheat flour
- 1 cup almond meal
- 1 t baking soda
- 12 oz semi-sweet chocolate chips
- Line standard sized jelly roll pan with aluminum foil. Grease generously with butter, sides and bottum.
- Preheat oven to 350F.
- Place sugars butter, eggs and vanilla in mixer bowl to cream. Mix for 30 seconds. Stop and scrape bowl, then beat 30 seconds.
- In separate bowl, sift flours, nut meal and baking soda together. Gradually, over two minutes, add this mixture to creamed ingredients, at stir speed. Scrape bowl, then beat for 30 seconds.
- Add chocolate chips at stir speed over 15 seconds.
- Using rubber spatula, scrape into mounds in prepared pan. Wet hands with water and then use hands to spread mixture evenly in pan.
- Place on middle rack in oven.
- Bake for 17-20 minutes.
- When completely cool, cut into 1.5 x 1.5 inch squares.
