Angel Hair Pasta With Chicken And Shrimp
- 4 oz fresh or frozen medium shrimp
- 1/2 c chicken broth
- 2 Tbs soy sauce
- 2 Tbs cornstarch
- 1/2 tsp ground ginger
- 8 oz boneless skinless chicken
- 6 oz angel hair pasta
- 2 tsp olive oil
- 1/2 c green onion cut into half inch peices
- 2 cloves garlic minced
- 1 yellow summer squash sliced
- 1 small red ,yellow or green pepper cut into strips
- thaw shrimp. in small bowl mix chicken broth, soy sauce, & cornstarch; set aside.
- cut chicken into 3/4 in. pieces; set aside.
- cook pasta according to directions except omit salt and oil. drain and keep warm
- on medium heat in large skillet
- mix and stir fry all vegetables until crisp-tender.
- remove from skillet add chicken and shrimp to skillet cook til done.
- then add broth mixture to chicken and shrimp stir til thick and bubbly. return vegetables to skillet stir til coated with sauce. serve over pasta
