Apple-Rhubarb Crumble
- For the Fruit Layer:
- 1 package chopped frozen rhubarb (500g)
- 3-4 large golden delicious apples, cored, peeled and sliced thinly
- *Note: proportions of fruits and type of fruits used may be varied according to your taste.
- For the Crumble:
- 3/4 cup unsalted butter, at room temperature
- 1 cup all purpose flour
- 1 cup lightly packed brown sugar
- 1 cup rolled oats
- 1 tsp ground cinnamon
- 3/4 cup raw almonds, chopped coarsely
- 2 tbsp crystallized ginger, chopped finely
- 1 tsp finely grated lemon or orange zest, OR 1.5 tsp finely chopped mixed peel
- 1 pinch salt
- 1/4 cup flax seeds (optional)
- Preheat oven to 375F. Arrange frozen rhubarb in bottom of square baking pan. Bake, covered, for 10 minutes. While rhubarb bakes, peel, core and slice apples. Remove rhubarb from oven and arrange apples evenly on top. Bake, covered, for 10 minutes. While fruit bakes, combine all ingredients for crumble in a medium mixing bowl and mix until blended evenly. Remove fruit from oven, and crumble the topping evenly over the fruit. Bake, covered, for 10 minutes, then bake uncovered about 10 more minutes until fruit is bubbling and topping is golden brown. Remove from oven and let stand 10 minutes. Serve with vanilla ice cream.
