Basque Vegetable Stew(Serves 8)
- 3 Tbsp. butter
- 1 large onion, sliced thin
- 2 large garlic cloves, minced
- 8 to 10 red new potatoes, unpeeled and sliced in 1/4-inch slices
- 3 large firm tomatoes, chopped
- 4 large carrots, sliced in 1/8-inch slices
- 1 1/2 c. sliced celery
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/4 c. parsley
- 1/3 to 1/2 c. chicken broth
- Melt butter in a Dutch oven and saute onions and garlic until onions
- are
- translucent
- and soft.
- Add potato slices; cover
- and simmer,
- stirringtften until potatoes are almost tender, about 20 minutes.
- If necessary, add more butter.
- Add tomatoes, carrots, celery, salt and pepper; cover and continue cooking
- on low
- heat until carrots are tender, about 20 minutes.
