Ellen'S Chocolate Chip Banana Bread
- 2 cups all-purpose flour
- 1 tsp cinnamon
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1 cup sugar
- 1 stick butter, softened
- 2 large eggs
- 1 1/2 cups mashed ripe bananas (about 3)
- 1/3 plain low-fat yogurt
- 1 tsp vanilla extract
- 1 cup mini chocolate chips
- Preheat oven to 350 degrees. Prepare two 8 1/2 x 4 1/2 with floured baking spray.
- Combine flour, cinnamon, baking soda and salt in a separate bowl and stir with a whisk to combine.
- In the bowl of an electric mixer beat the sugar and butter on medium speed until well blended. Add eggs, one at a time, beating well after each addition. Add banana, yogurt and vanilla; beat until blended. Add flour mixture; beat at low speed just until moist. Add the mini chocolate chips until combined. Spoon Batter into two prepared pans. Bake at 350 for 50 minutes or until a wooden stick inserted comes out clean. Cool in pans on a wire rack for 10-15 minutes. Remove from pans to wire rack and allow to cool completely.
