Avocado And Crabmeat Ring

  1. Sprinkle gelatin over 1 1/2 cups of water in top of double boiler.
  2. Let stand 5 minutes.
  3. Place over hot water and stir until dissolved.
  4. Refrigerate approximately 30 minutes until syrupy. Separate crabmeat pieces.
  5. Cut avocado in half.
  6. Press chunked and peeled avocado through sieve until measures 1 cup.
  7. Toss crabmeat, avocado, sour cream, mayonnaise, onion, celery, salt, pepper and lemon juice.
  8. Mix with gelatin and pour into 6-cup ring mold. Refrigerate until firm.
