Hot German Potato Salad
- 1 lb. medium white potatoes
- 8 slices bacon
- 1 large onion, chopped
- 1/3 c. vinegar
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 tsp. sugar
- 3 beef bouillon cubes
- 1/2 c. water
- 2 to 3 Tbsp. salad oil
- snipped parsley
- Cook potatoes (whole) in plenty of boiling salted water until just tender (15 to 20 minutes).
- Drain; let stand a few minutes until cool enough to handle, then peel.
- Cut into 1/2 inch thick slices.
- Place in a salad bowl.
- In skillet, fry bacon until crisp; remove, crumble and add to potatoes.
- To fat in skillet, add onions and cook until transparent.
- Next, add vinegar, salt, pepper, sugar, bouillon cubes and water.
- Bring to a boil, while stirring and dissolving bouillon cubes.
- Pour with salad oil over potatoes; toss carefully.
- Sprinkle with parsley.
- It's best to prepare 45 minutes before serving time.
