Spicy Chicken Teriyaki Udon
- 4 tbsp butter
- 2 lbs boneless, skinless chicken breast, cut to small pieces
- salt/pepper to taste
- pinch of chicken base
- pinch granulated garlic
- 1/4 cup julienne green peppers
- 1/4 cup julienne red peppers
- 1/4 cup julienne carrots
- 1/4 cup shiitake mushrooms
- 1/4 cup diced green onion
- 16 oz Udon noodles
- 1/2 cup teriyaki sauce
- 1/4 teaspoon Sriracha
- 1 tsp fresh, diced parsley
- 1 tsp sesame seeds
- Heat saute pan and add butter. When pan hot & butter melted, add chicken and cook in batches until browned on first side. Lightly salt/pepper before turning, then brown second side.
- Add chicken base and garlic to chicken and stir well. When chicken almost cooked through, add: peppers, carrots, and mix well. After a min, add mushrooms, onions.
- Saute vegetables and chicken together, stirring occasionally.
- Meanwhile, cook Udon noodles according to package directions. Drain noodles well and add to cooked chicken and vegetables.
- Top noodles with teriyaki and Sriracha sauces, mix well. Place in middle of large pasta bowl, garnish w/parsley and top w/sesame seeds.
