Pork Fried Rice
- 2 boneless pork chops, diced
- 1/2 c. diced carrots
- 1/2 c. finely chopped broccoli
- 1/2 c. frozen tiny English peas, thawed
- 1/4 c. chopped green onion
- 2 Tbsp. margarine
- 3 c. cooked rice
- 2 eggs, beaten
- 3 to 4 Tbsp. soy sauce
- 1/4 tsp. garlic powder
- 1/8 tsp. ground ginger
- Saute
- pork
- chops,
- carrots,
- broccoli, peas and green onion in margarine
- in a large skillet 3 to 4 minutes or until pork is cooked.
- Remove
- from
- skillet,
- and set aside.
- Cook rice in skillet
- until thoroughly heated.
- Push rice to sides of skillet, forming
- a
- well in center.
- Pour eggs into well, and cook
- until set,
- stirring
- occasionally.
- Stir rice into eggs;
- add
- the vegetables and remaining ingredients, stirring well.
- Yields 4 to 6 servings.
