Anise Springerle
- 4 eggs
- 2 cups white sugar
- 12 drops anise oil
- 1 tsp anise seed
- 1/4 cup soft butter
- 1 heaping tsp baking powder dissolved in a bit of milk
- 4 cups white flour
- additional flour for rolling
- Combine first four ingredients in mixer on slow. Continue mixing until smooth.
- Add butter and beat well.
- Add baking powder dissolved in milk and beat well.
- In small increments, add the flour mixing well in between each addition.
- Dump dough onto counter and kneed for a few good strokes.
- Cover in wax paper and refrigerate for at least 2 hours.
- Roll out dough to 1/4" thick
- Press springlerle board pattern into dough and cut and place on greased and floured cookie sheet.
- -OR- roll out dough and cut into desired shapes with cookie cutters and place on greased and floured cookie sheet.
- Let stand over night.
- Bake in slow oven (300 degrees F) for 30-40 minutes.
- The cookie is really hard to bite and is just right for a cup of tea and dunking.
- We lovingly refer to them as "adult teething cookies" or "hockey pucks".
