Nutty Bundt Cake
- 1 1/8 cup butter (or margarine)
- 1 cup sugar
- 4 eggs
- 2 tbsp vanilla sugar
- (or 1 tsp vanilla
- extract)
- 4 1/2 cups ground pecans or
- ground walnuts
- 1 cup milk
- 3 1/2 cups flour
- 2 tsp cinnamon
- 1 tsp rum extract
- 1 tbsp baking powder
- In mixing bowl beat butter and sugar until fluffy, add eggs, mix well. Beat in vanilla, add ground pecans, mixing well.
- In separate bowl, sift together flour, cinnamon and baking powder. Stir into butter/sugar mixture, adding milk. Mix in rum extract. Continue beating until well mixed.
- Pour batter into well greased bundt form pan. Bake in preheated oven (325^ - 350^) for approximately 50 minutes, or until toothpick inserted comes out clean.
- Cool in pan, slice and serve
