Sanjay'S Pulled Pork Salad
- 2-3 tbsp very good canola oil (I prefer La Tourangelle)
- 1 lb pork shoulder, pulled
- 1/2 cup crystallised ginger
- 1 Red Delicious apple, peeled, cored and thinly sliced
- 1 cup dried cherries
- 2-3 tbsp good clover honey
- Juice of 1/2 orange
- 1-2 tsp good Kentucky Bourbon
- Sea salt
- Black pepper
- 1-1/2 cups very good barbeque sauce (I prefer Blue Front Bar-B-Q Hot)
- In a heavy, non-stick skillet, heat the oil over medium heat until it is very hot, but does not smoke.
- Saute the pork shoulder until beautifully golden-brown.
- Remove from heat, and drain on paper towelling.
- In the same skillet, saute the crystallised ginger, apple slices and dried cherries.
- Stir in the honey, orange juice and Bourbon; blend thoroughly.
- Taste for seasoning, and add sea salt and/or black pepper to taste.
- Return the sauteed pork to the skillet; blend thoroughly.
- Stir in the barbeque sauce; blend thoroughly.
- Reduce heat to low, and continue to cook.
- Wash & dry the salad greens, and arrange in pretty glass bowls.
- Top with the pork, and serve immediately.
- Blue Front Bar-B-Q Sauce is nearly impossible to find outside Florida, but can be ordered online.
- If you have friends in central Florida, they can send you some for Christmas (isn't that right, JP?)
- This is very good with a nice Indian beer, such as Kingfisher or Hayward's.
- If you're not a drinking man, pour yourself some sweet tea and thank the Lord for His blessings.
