Indonesian Vegetable Salad With Peanut Dressing
- 4 eggs, hard boiled
- 2 carrots cut into match sticks
- 1 1/2 c bean sprouts
- 1/2 red bell pepper
- 1/2 English cucumber
- 1 pkg extra firm tofu
- 2 TBS oil
- 1/3 c creamy peanut butter
- 3 TBS hot water
- 3 TBS lime juice (can be key lime juice)
- 1 TBS soy sauce
- 2 tsp brown sugar
- 2 tsp red curry paste
- 2 tsp fresh cilantro
- arugula or other fresh lettuce
- Cook carrots for 1 minute
- drain
- on plates arrange arugula, egg halves, bean sprouts, red pepper and cucumber and carrots
- Cut tofu into 1/2 inch slices and saute in oil till browned. After tofu is cooked, place slices on paper towels to drain. Place tofu on top of veggies
- Make sauce by whisking peanut butter, water, lime juice, soy sauce, brown sugar, curry paste and cilantro. Spoon over top of salad
