Tropical Shrimp Salad

  1. Rinse and pat dry shellfish, dredge one side in spices, set aside. Thinly slice red onion, dice fruit to desired size, set aside. (do not refrigerate)
  2. Place nuts on cookie sheet and toast under broiler until just brown, shaking periodically (watch closely!)
  3. Add olive oil to a griddle or non stick pan and set to medium high heat, sear scallops/shrimp for 2-3 minutes, turn down heat to med and turn once. Cook until just firm.
  4. Arrange greens on 2 plates; evenly sprinkle with red onion, fruit, nuts, and blue cheese. Lightly drizzle with balsamic, then with sweet balsamic, top each salad with 6 with seared shellfish and serve
