Spinach Artichoke Casserole

  1. If frozen artichokes are used, cook according to instructions. Do not
  2. overcook. Drain the artichokes, and place them on bottom of a 3-quart
  3. casserole. Squeeze as much moisture as possible from the spinach, and
  4. layer
  5. it on top of the artichokes. In an electric mixer blend the cream
  6. cheese,
  7. mayonnaise, and butter or oil until light and fluffy. Gradually beat in
  8. the
  9. milk, and spread this mixture over the top of the spinach. Sprinkle with
  10. pepper and the cheese.
  11. Bake, uncovered, at 375 degrees for 40 minutes, or until the top is
  12. lightly
  13. browned.
  14. You can refrigerate this dish after putting it together and before
  15. baking
  16. it, but if it is chilled, slightly increase the baking time.
