Grilled Salmon With North African Flavors
- 1/4 c. low fat plain yogurt
- 1/4 c. chopped parsley
- 1/4 c. chopped cilantro
- 2 TBS. lemon juice
- 1 TBS. extra virgin olive oil
- 3 gloves garlic minced
- 1 1/2 Tsp. paprika
- 1 tsp. ground cumin
- 1/4 tsp. salt or to taste
- ground pepper to taste
- 1 lb. center cut salmon fillet
- cut into 4 portions
- 1 lemon cut in wedges
- 1.Stir together yogurt, parsley, cilantro, lemon juice, oil, garlic, cumin, salt, pepper (keep in frig til ready to use)
- 2. Reserve 1/4 cup for sauce.
- 3. Place salmon fillets in plastic bag. Pour in the herb mix, seal the bag, turn to coat. Refrigerate 20-30 minutes turning the bag once.
- 4. Oil grill. Remove excess marinade. Grill salmon 4-6 minutes til done.
- 5. Top each piece with dollop of reserved sauce and garnish with lemon wedge.
