Chili Chicken Casserole
- 6 chicken breast or one whole chicken pre cooked
- 1 can cream of chicken soup(gluten free)
- 1 can cream of mushroom soup(gluten free)
- 1 cup milk
- 1 med onion chopped
- 1 4oz can diced Ortega chilies
- 1 7oz can green chili salsa
- 1/2lb jack cheese grated
- 1/2lb cheddar cheese grated
- 1 doz corn tortillias cut into wedges
- Make sauce using soup, milk, onion, chilies and salsa. Cook chicken breast for one hour or take meat off of one whole chicken and cut into bite size pieces. Alternate layers starting with sauce, tortillas, chicken and cheese. Let stand for 2 hours before baking. Bake at 350 for 30 min or until heated through. Let stand for casserole to set up.
