French Toast Delicioso

  1. Cut loaf (preferably day-old) into long diagonal slices.
  2. In a large mixing bowl. Combine eggs and milk. Add cardamom, nutmeg, and vanilla extract. Slowly mix flan mix into batter. Zest 1/2 the lemon directly into bowl. Add rum and stir. Slowly stir maple syrup into batter.
  3. Separately, prepare a cinnamon sugar mix on a plate.
  4. Pour batter into shallow 2" deep casserole dish. Submerge 3 to 4 slices at a time into batter. Push each piece down 3 times to full submerge. Place a small portion of butter in large skillet over medium heat to coat. Turn over slices and repeat (pushing them down 3 times for absorption). Once butter is melted. Place the prepared slices into pan. Maintain medium heat. Place next slices into batter (and repeat above process). Let cook for three minutes. (Optional, sprinkle sugar on the side that is up to assist in quick cooking the side). Flip and cook for another 1 to 1 1/2 minutes. Remove from skillet and let stand for 1 minute or cool to touch. Place each slice in cinnamon sugar mix and gently coat each side.
  5. Repeat until batter and / or bread are used. Batter does not keep due to flan in mix. Recipe can be halved.
