Cranberry And Onion Pork Loin
- 1 pound of pork loin
- 1 medium white onion
- 1 cup of dried cranberries
- 1 cup of white wine
- 1 jigger of amaretto liquor
- 2 cloves of garlic
- 2 tablespoons of sweet and spicy mustard
- 2 tablespoons of Olive oil
- 1 tablespoon of butter
- 1 teaspoon of sage
- 1 teaspoon of dried thyme
- salt and pepper to taste
- Start this the recipe by putting the pork loin in a marinade of the olive oil, 2 cloves of garlic,1 teaspoon of sage, and salt and pepper this to your like.
- Add the jigger of amaretto to the dried cranberries. Soak them until they plump.It is best if they are left at least overnight in the fridge.
- Caramelize the onion in the butter. Add the thyme and chill overnight.
- Add the chilled ingredients into the slow cooker. Start with a base of cranberries,add the loin, then the onions on top. Add the white wine and the mustard to the loin. Cook slow and baste it if you can.
