Turkey Potatoes
- 1 pkg. lean ground turkey
- 4 large baking potatoes
- 1/2 c. finely chopped onion
- 1/2 c. chopped sweet green pepper
- 2 Tbsp. Worcestershire sauce
- 1/2 tsp. minced fresh garlic
- 3/4 tsp. black pepper, divided
- 1/4 tsp. cayenne
- 1 1/2 tsp. salt, divided
- 1/2 c. milk
- 2 Tbsp. sour cream
- 6 slices bacon, cooked and crumbled
- 1 tsp. paprika
- Bake potatoes.
- Meanwhile, saute turkey until cooked through. Add onion, pepper, Worcestershire, garlic, peppers and salt. Saute 3 to 5 minutes until onion is translucent.
- Remove from heat.
- Cut tops off potatoes and scoop out cooked potatoes, reserving shells.
- Combine potatoes with milk and sour cream. Whip until smooth.
- Spoon 1/4 of turkey mixture into each potato shell.
- Top with whipped potatoes; sprinkle with bacon and paprika.
- Bake at 400u0b0 for 15 to 20 minutes or until hot and lightly browned.
