Gluten Free/ Carbless Mini Chocolate Mint Lavaless Cakes
- 9 ounces semi-sweet dark chocolate chips
- 1 teaspoon non dutched european cocoa powder
- 1/4 cup (1/2stick) unsalted butter
- 1teaspoon pure mint extract
- 1/4 teaspoon salt
- 4 large eggs, at room temperature
- 1/4 cup granulated sugar
- microwave chocolated chips, cocoa powder, unsalted butter, mint extract, and salt together in a glass bowl for 1-2 minutes. stir this into a paste/ batter with spoon. In a separate bowl crack eggs while beating with a electric egg beater add sugar gradually. Beat till mixture becomes light & fluffy & doubles in size. Then add the chocolate batter to the egg batter by folding it in wit spoon or spatula. but paper cup cake liners in cup cake tin spoon batter almost up to the top of liners (leave a little less than 1/8th inch to the top. bake in the oven 375 degress for 12-14 minutes at max.
