Walnut Vinegarette W/ Mixed Greens & Goat Cheese
- FOR DRESSING
- 1/2 Cup of Toasted Walnut Pieces
- 1/4 Cup of Olive Oil
- 1 tsp. Garlic Salt
- 2 Cloves of Garlic
- 1 1/2 T. Lemon Juice
- 1 T. Dijon Mustard
- 1 T. Balsalmic Vinegar
- 1 -1 1/2 Bags of Mixed Greens(Pre-washed and packaged from your grocer)
- 1/2 Cucumber split and sliced
- 1/2 Small Red Onion, sliced
- and rings seperated.
- 4 oz. Goat Cheese
- Place first 7 ingrediants in a mini food processor or chopper and blend till smoothe. Taste dressing, and add salt and pepper as needed.
- Combine lettuce, cucumber and onions in a large salad bowl, drizzle dressing on top and toss to coat. When serving top with Crumbled Goat Cheese.
