The Best Banana Bread
- 1 1/4 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 very ripe bananas
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 cup white or brown sugar
- 1/2 cup (1 stick) melted butter
- 1. Preheat the oven to 350 degrees and tinfoil and grease a loaf pan.
- 2. Peel the bananas and mash with a large fork until completely mashed.
- 3. In a separate bowl, whisk the eggs, vanilla, sugar, and butter. Add the bananas and mix until blended.
- 4. In another bowl, sift the flour. Add the baking soda and salt.
- 5. Pour the banana mixture into the flour mixture and mix until completely blended. (It's okay if it has lumps.)
- 6. If desired, add raisins, dried fruit, or chocolate chips!
- 7. Pour batter into loaf pan and bake for 45 minutes, or until toothpick inserted comes out clean.
- 8. Serve with ice cream or milk and spread butter on top! Enjoy!
