Two Bricks Beef W/ Black Bean Relish

  1. 1.tprinkle brown sugar, tamari, pepper and salt on flank steak. Place 1/2 of papaya slices on bottom of round, flat plastic container, next lay flank steaks, top with papaya slices. Place large round plate on top of papaya slices and weigh down with two bricks. Return container to refrigerator to marinate over night.
  2. 2.tor sauce, melt butter in saucepan and saute garlic and shallot for 3 minutes. Add flour and pepper, cook and stir until blended. Stir in dry mustard and steak sauce, slowly stir in beef consomme, cooking and stirring until thickened and blended. Keep warm.
  3. 3.tor black bean relish, melt butter in pan and saute bell peppers and onion for 5 minutes. Add coriander seed, cook and stir for 1 minute. Add corn, beans, white wine vinegar and Cajun seasoned salt. Cook and stir for 10 minutes. Just before serving stir in cilantro.
  4. 4.temove steaks from refrigerator and let sit at room temperature for 15 minutes.
  5. 5.tightly grease rack of grill and preheat to medium high heat. Place flank steak on grill and cook until desired doneness.
  6. 6.temove steak from grill and let sit for 4 minutes before slicing against the grain at a 45 degree angle. Place steak on serving platter, top with sauce and accompany with black bean relish.
