My Enchilada Casserole
- 1 Lb. of Ground Beef / Gr. Chuck ( I use Gr. Chuck. Less fat)
- Diced onions to fry with beef. ( About 1/4 C. )
- 3/4 of an Envlope of Taco Sauce Mix.
- While your browning that... You'll need:
- 1 Can of Refried Beans. ( I use Rosarita because they are MOIST) or make Your Own
- 2 Cans of ENCHILADA SAUCE by Ol El Paso - MILD ( The Best in my Opinion)
- 1 PKG of Flour Tortillas
- 1 8 OZ. Pkg. of Mild Cheddar Cheese ( shredded)
- Now that your beef is browned, move to side & keep warm.
- Heat the refried beans, and keep warm.
- Lay Tortillas flat one at a time and fill with:
- 2 T. of meat , Some beans, A little cheese... A touch of enchilada sauce & roll up, put in a 9 X 13 glass Pan.
- You'll get the idea of how much of each ingredient you can put in a Tortilla after you roll a few up.
- Pre Heat your oven to 350 degrees... Bake for 25 Minutes or til HEATED THROUGH.
