Haricots Verts With Goat Cheese And Warm Bacon Dressing

  1. 1. Cook beans in large pot of boiling salted water until crisp/tender.(about 5 min)
  2. 2. Drain, rinse with cold water,drain again and pat dry.(Can do this a day ahead) Place in large bowl.
  3. 3. Cook bacon until crisp. Drain on paper towels.
  4. 4. Add shallots and garlic to bacon drippings in skillet and saute over medium heat until soft.(about 5 min)
  5. 5. Add vinegar, mustard, and dry mustard and whisk, scraping up browned bits.
  6. 6. Whisk in oil.
  7. 7. Season dressing with salt and pepper.
  8. 8. Toss beans with dressing.
  9. 9. Sprinkle with sheese, bacon and pomegranate seeds.
