Gingered Fruit Salad
- Dressing
- 1/4 cup honey
- 2 teaspoons grated ginger
- 1/2 teaspoon grated lime peel
- 3 tablespoons fresh lime juice
- Salad
- 2 cups strawberry slices
- 2 cups cantaloupe cubes
- 2 cups fresh pineapple cubes
- 1 cup seedless green grapes
- 1 cup fresh blueberries
- 2 cups fresh raspberries
- In 1-cup microwave-safe measuring cup, combine all dressing ingredients; mix well. Microwave on HIGH for 30 to 45 seconds or until thoroughly heated. Cool 15 minutes or until completely cooled.
- In very large bowl, combine all salad ingredients. Pour dressing over fruit; toss gently to coat. Cover and put in the refrigerator for 1 hour before serving.
