Mexican Pizza
- 4-6 Tortillas
- 2-3 cups Monterrey Jack or other cheese, shredded
- 4 Avocados
- 1/2 cup Cilantro, shredded
- 1/2 cup lettuce, shredded
- 4-6 Green Onions, chopped
- 1 Tomato, chopped
- Juice from 1 Lime or 1/2 Lemon
- 1/2 cup Olives, chopped
- 1 lb ground beef
- 1/2 package of white mushrooms, sliced
- Salt, chile powder, cayenne, garlic powder
- Brown the ground beef in a pan, add salt, cayenne, chile powder, and garlic to taste. Drain excess fat. Add the mushrooms, and saute for just a few minutes.
- Mash avocado, cilantro, lettuce, onions, tomato, juice, salt and other spice to make a guacamole.
- Toast tortillas on both sides in a griddle or skillet. Place the tortillas on a baking sheet Spread the guacamole in a thin layer on the tortilla, add a layer of cheese, some olives to taste, a layer of beef and mushrooms (keep it thin if you want to eat it by the slice), and then add another layer of cheese (and any other toppings you like). Place in a 350 degree oven for 5-10 minutes. Place beneath the broiler for a minute or two to finish.
