Thai Spicy Citrus Sauce
- 1 10 oz. bottle Thai chili sauce ( I like Thai kitchen brand)
- zest and juice from:
- 2 lemons
- 2 limes
- 2 oranges
- 2 tbsp fresh grated ginger
- 2 tbsp peanut oil
- 4 cloves minced garlic
- 1/3 cup sugar
- 1/4 cup white wine
- 2 tbsp mirin (Japanese sweet wine)
- 1 tsp fish sauce
- 1 tsp sesame oil
- I've varied this on occasion with the addition of things like mint, coconut, coconut milk, cilantro, or basil
- Combine all ingredients in a blender, food processor, or hand blender until well combined. Return to a well sealed container Mason jars are good for this.
- To make a slightly thicker sauce pour 1/3 cup of sauce into small saucepan, add 1 tsp cornstarch and bring to a light boil stirring constantly. This process with intensify the heat so you may want to add some sugar to taste to balance it.
